Cinnamon Rolls

Ingredients:

Dough

  • 1 cup milk
  • 1 stick butter (softened)
  • 1/3 cup white sugar
  • 2 1/2 tsp yeast
  • 2 eggs
  • pinch of salt
  • 4 cups all purpose flour

Filling

  • 1 stick butter
  • 1 cup brown sugar
  • 2 1/2 TBSP cinnamon

Steps:

  1. Bring milk to a light boil and transfer to mixing bowl
  2. Add butter and stir until melted (Make sure mixure is around 90 degrees)
  3. Add sugar and yeast and let stand for 10 min or until foamy.
  4. Add eggs and salt, stir
  5. add in flour and stir until a dough forms
  6. Knead for 10 minutes then place in a greased bowl to rise for an hour.
  7. For the filling, combine butter, sugar, and cinnamon in a bowl until smooth
  8. Once dough has risen, roll out into a rectangle and spread filling down evenly. Roll and cut into equal rolls.
  9. Let rolls rest for 30 min and preheat oven to 350
  10. Bake for 20-25 minutes or until golden brown

 

Soft Pretzels

Ingredients:

  • 1 1/4 cup warm water 
  • 1 TBSP yeast
  • 1/4 cup packed brown sugar
  • 3 1/2 cups all purpose flour 

Boiling Mixure 

  • 1/4 cup baking soda 
  • 6 cups water 

Steps:

  1. mix together water, yeast, and brown sugar and let sit for 10 minutes.
  2. Add in flour and knead for 10 minutes. 
  3. Once a dough ball forms, let dough rest in a covered, greased bowl for 20 minutes.
  4. Pat dough out into a rectangle (3/4 inch thick) and cut into cubes or fold into pretzel shape.
  5. Boil in soda mixture for 30 seconds on each side
  6. Bake at 400F for 8-10 minutes or until a dark, golden brown.
Double Chocolate Muffins

Ingredients:

  • 6 TBSP melted butter 
  • 1/2 cup sour cream (or plain greek yogurt)
  • 3/4 cup whole milk (or milk of choice)
  • 1 large egg
  • 1 1/3 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1/4 cup sugar 
  • 1/4 tsp salt 
  • 1/3 cup chocolate chips 

Steps:

  1. Preheat oven to 400F 
  2. Line muffin tin 
  3. Combine all dry ingredients 
  4. Combine all wet ingredients
  5. Slowly add dry into wet ingredients and mix until just combined. 
  6. Bake for 15-20 minutes 
Pumpkin Bars

Ingredients: 

Cake 

  • 4 eggs 
  • 1 2/3 cups granulated sugar 
  • 1 cup vegetable oil
  • 1 (15oz) can pumpkin puree
  • 2 cups all purpose flour 
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon

Frosting

  • 1 (3oz) package cream cheese
  • 1/2 cup softened butter
  • 1 tsp vanilla
  • 2 cups confectioners sugar

Steps: 

  1. Preheat oven to 350F
  2. Mix eggs, sugar, oil, and pumpkin puree until light and fluffy 
  3. In a separate bowl combine all dry ingredients
  4. Add to pumpkin mixture and mix until just combined
  5. Bake in 10×15 pan for 25-30 minutes 
  6. For frosting cream together butter and cream cheese until fluffy 
  7. Add in vanilla, mix. Sift in confectionery sugar and mix unitl smooth. 
Gingerbread Cookies

Ingredients:

  • 3 cups all purpose flour 
  • 2 tsp ground ginger 
  • 1 tsp cinnamon 
  • 1 tsp baking soda 
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 3/4 cup softened butter
  • 3/4 cup brown sugar 
  • 1/2 cup molasses 
  • 1 egg
  • 1 tsp vanilla extract 

Steps:

  1. Combine flour, ginger, cinnamon, nutmeg, baking soda, and salt
  2. Beat together butter and brown sugar until fluffy 
  3. Add in egg, molasses, and vanilla, mixing until combine.
  4. Slowly add in flour mixture until dough forms 
  5. Refrigerate for 4 hours or overnight 
  6. Roll out to 1/4 inch thick 
  7. Bake at 350F for 8-10 minutes
