Cinnamon Rolls
Ingredients:
Dough
- 1 cup milk
- 1 stick butter (softened)
- 1/3 cup white sugar
- 2 1/2 tsp yeast
- 2 eggs
- pinch of salt
- 4 cups all purpose flour
Filling
- 1 stick butter
- 1 cup brown sugar
- 2 1/2 TBSP cinnamon
Steps:
- Bring milk to a light boil and transfer to mixing bowl
- Add butter and stir until melted (Make sure mixure is around 90 degrees)
- Add sugar and yeast and let stand for 10 min or until foamy.
- Add eggs and salt, stir
- add in flour and stir until a dough forms
- Knead for 10 minutes then place in a greased bowl to rise for an hour.
- For the filling, combine butter, sugar, and cinnamon in a bowl until smooth
- Once dough has risen, roll out into a rectangle and spread filling down evenly. Roll and cut into equal rolls.
- Let rolls rest for 30 min and preheat oven to 350
- Bake for 20-25 minutes or until golden brown
Soft Pretzels
Ingredients:
- 1 1/4 cup warm water
- 1 TBSP yeast
- 1/4 cup packed brown sugar
- 3 1/2 cups all purpose flour
Boiling Mixure
- 1/4 cup baking soda
- 6 cups water
Steps:
- mix together water, yeast, and brown sugar and let sit for 10 minutes.
- Add in flour and knead for 10 minutes.
- Once a dough ball forms, let dough rest in a covered, greased bowl for 20 minutes.
- Pat dough out into a rectangle (3/4 inch thick) and cut into cubes or fold into pretzel shape.
- Boil in soda mixture for 30 seconds on each side
- Bake at 400F for 8-10 minutes or until a dark, golden brown.
Double Chocolate Muffins
Ingredients:
- 6 TBSP melted butter
- 1/2 cup sour cream (or plain greek yogurt)
- 3/4 cup whole milk (or milk of choice)
- 1 large egg
- 1 1/3 cups all purpose flour
- 1/2 cup cocoa powder
- 1/4 cup sugar
- 1/4 tsp salt
- 1/3 cup chocolate chips
Steps:
- Preheat oven to 400F
- Line muffin tin
- Combine all dry ingredients
- Combine all wet ingredients
- Slowly add dry into wet ingredients and mix until just combined.
- Bake for 15-20 minutes
Pumpkin Bars
Ingredients:
Cake
- 4 eggs
- 1 2/3 cups granulated sugar
- 1 cup vegetable oil
- 1 (15oz) can pumpkin puree
- 2 cups all purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
Frosting
- 1 (3oz) package cream cheese
- 1/2 cup softened butter
- 1 tsp vanilla
- 2 cups confectioners sugar
Steps:
- Preheat oven to 350F
- Mix eggs, sugar, oil, and pumpkin puree until light and fluffy
- In a separate bowl combine all dry ingredients
- Add to pumpkin mixture and mix until just combined
- Bake in 10×15 pan for 25-30 minutes
- For frosting cream together butter and cream cheese until fluffy
- Add in vanilla, mix. Sift in confectionery sugar and mix unitl smooth.
Gingerbread Cookies
Ingredients:
- 3 cups all purpose flour
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup softened butter
- 3/4 cup brown sugar
- 1/2 cup molasses
- 1 egg
- 1 tsp vanilla extract
Steps:
- Combine flour, ginger, cinnamon, nutmeg, baking soda, and salt
- Beat together butter and brown sugar until fluffy
- Add in egg, molasses, and vanilla, mixing until combine.
- Slowly add in flour mixture until dough forms
- Refrigerate for 4 hours or overnight
- Roll out to 1/4 inch thick
- Bake at 350F for 8-10 minutes
